You just cannot talk about food at Vico Equense if you don’t start with pizza. Here in this region, the pizza was born and transformed from a simple baked bread-like product something to create with on’s imagination surprising and always welcome.
The ovens here are all fed firewood: the high temperatures that are reached cook the pizza quickly and perfectly without ruining the ingredients to the contrary, the flavour is enchanced. Thin, soft, fragrant, with its raised crust all round, it is prepared starting with the blends of flour (each house has its own) that vary according to the seasons and humidity; then dairy products, basil, local tomatoes, oil, a little lard and some grated parmigiano as demanded by tradition.
